Fall Whoopie Pies from Matthew Mead

How about a Fall Whoopie Pie that includes three favorite autumn flavors:  gingerbread, pumpkin and pecan pie (my favorite).  These pecan pumpkin gingerbread whoopie pies from Matthew Mead have a praline cream cheese filling and edges that have been rolled in toasted chopped pecans.  I share with you a recipe that I found in our neighborhood paper.  I know I can't wait to try these for the upcoming Thanksgiving holiday!

Which came first, the cupcake or the macaron? Or did pie beat them in the race to be the trendy treat of the moment?

Maybe it doesn't matter. Because the hot sweet now is the whoopie pie, those delicious oversized cake-like cookies sandwiching a fluffy, sugary filling.
While chocolate cookies with vanilla frosting are traditional, whoopie pies come in just as many wild flavor combinations as cupcakes, macarons and pies.

For our fall whoopie pie, we looked to three favorite cold weather flavors — gingerbread, pumpkin and pecan pie. Gingerbread lends itself perfectly to the shell of a whoopie pie. It is, after all, still cake. And pumpkin marries so beautifully with the spices of gingerbread that we couldn't leave it out.
But for the filling, we wanted to get away from traditional fluffy vanilla frosting. So we opted for a praline cream cheese filling and rolled the edges in toasted chopped pecans for a treat that's reminiscent of a creamy pecan pie.

But for the filling, we wanted to get away from traditional fluffy vanilla frosting. So we opted for a praline cream cheese filling and rolled the edges in toasted chopped pecans for a treat that's reminiscent of a creamy pecan pie.

Ingredients:
For the cakes:
  • 2 1 /4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/2 cup vegetable oil
  • 2 cups packed dark brown sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 2 tablespoons minced candied ginger
  • 2 eggs
  • 15-ounce can pumpkin puree
For the filling:
  • Two 8-ounce packages cream cheese
  • 1 cup Marshmallow Fluff
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup toasted chopped pecans

Prep time: under 25 minutes
Cook time: under 35 minutes

Directions:
1. Heat the oven to 350 F. Line 2 large baking sheets with parchment paper.
2. In a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves and allspice. Set aside.
3. In the bowl of an electric mixer, beat together the butter, oil, brown sugar, molasses and vanilla. Add the orange zest, candied ginger and eggs, then beat to combine. Beat in the pumpkin puree. Stir in the flour mixture until thoroughly mixed.
4. Drop by the dough in mounds (1/4 cup for large or 2 tablespoons for small) onto the prepared baking sheets, leaving several inches between each for spreading. You should make 20 or 40 cakes, depending on whether you want small or large whoopie pies. Bake for 15 to 20 minutes, or until the cakes feel slightly firm to the touch. Allow to fully cool before filling.
5. To make the filling: In the bowl of an electric mixer, beat together the cream cheese, Fluff, butter, brown sugar and vanilla until smooth. Drop a large spoonful onto the flat side of half of the cakes. Use a second cake to top each, pressing the flat sides together.
6. Place the pecans in a large, wide bowl, then roll the edge of each whoopie pie in the pecans to coat. Refrigerate in an airtight container.

Servings: Makes 20 small or 10 large pies

{Free Printable} Halloween "BOO" Printable Sign!

Halloween is just two short weeks away.  Have you ever been Booed?  Last year, I created a "We've Been Booed" sign and started the "booing" on our street.  It was so fun to see the signs pop up at homes up and down the street.

They're popping up in a neighborhood near you: "We've Been BOOed!" signs that fly from house to house. Before you know it, "You've Been Booed"! What's behind it all?
Sometimes called "Ghosting" or "the Phantom", the Halloween "BOO" is an Autumn take on "Secret Santa" or May baskets. Put together a goodie bag of Halloween treats for a neighbor and then they do the same for another neighbor.

I was all set to leave treats for neighbors over the weekend when I realized that it wouldn't be a secret who left it if I used the same sign from last year.  Off I went to create a new sign and now you too can share in the fun with this year's free printable "BOO" sign.

Ready? Set? BOO ... for neighborhood Halloween fun!
Download your sign and instructions HERE.

Enjoy!

{New to the Shop} She Said Yes!

A few months ago, I took a photography workshop from our family photographer, Alison Eden.  Alison's friend Ginny from Ginny B Photography also taught at the workshop.  Since then, Ginny and I have corresponded and put together ideas for creating some fun and unique props.  Ginny sent me pictures from a recent session which was for an engagement photo shoot and I love how they turned out.

I created a "She Said Yes" banner using a textured linen background and it adorned with hearts.  I just added the banner to my shop.

Please email me about customization options.
Looking forward to sharing more photo props printables soon!

We had such a great time with a new tradition of "BOOing" our neighbors with a treat last year. My two girls Annabelle and Madeleine really enjoyed this fun activity! {diy Tutorial} Halloween Treat Cones

Want a unique way to serve Halloween treats for your holiday parties this year?  Create popcorn-filled paper cones displayed on a "bed" of candy corn!   Treat cones are so popular and perfect for parties, play dates, holidays and more! Now you too can create them with my super easy step-by-step tutorial.  To see other ways of using treat cones click HERE.

WHAT YOU’LL NEED
• craft Styrofoam sheets
• lollipop sticks
• candy corn
• colored paper
• tape/gluestick
• edged tray or other similar shaped vessel – like the bottom part of a shirt box or an acrylic shadow-box frame

DIRECTIONS
Roll the paper into cones and secure with tape/glue. Leave a small hole open at the bottom of each cone, just big enough to fit over a lollipop stick.
Cut and place a Styrofoam sheet so that it fits snugly inside a decorated box, tray or vessel.
Insert lollipop sticks into the Styrofoam in rows, then cover the top of the foam completely with candy corn.
Fill paper cones with flavored popcorn or kettle-corn (or a similar treat), then slip the filled cones over the lollipop sticks, which will give them the illusion of standing up on their own on top of the candy corn!

{Interview} Meet Maggie Austin Cake

As you know, I have fallen in love with Pinterest.  It has become an obsession really.  I find the most amazing pictures.  It is my go to place for finding inspiration for color palettes, holidays, desserts, home design and so much more!  Recently, I was putting together my favorite pictures for a board that I created for All Things Ruffled.  That is when I came across the most elegant and exquisite cakes. I instantly fell in love and had to learn more.  I discovered that the creator and designer behind these gorgeous pieces of art is Maggie Austin from Maggie Austin Cake.

Located in the Washington, DC metro area, Maggie Austin Cake offers cakes and cookies that are breathtaking masterpieces.

I had the honor and privilege to interview Maggie and I am delighted to share with you some of her beautiful and unique designs. Are you ready to swoon?

{Question}  Please tell us about Maggie Austin Cake, from conception of the idea to where you are today.

Maggie Austin Cake was launched a little over a year ago with the goal of translating visual art into edible art.  I took some photos and put up the website and within just a few days, it went viral!  I am deeply honored to say that today, we are building out our studio.  It's been quite a rollercoaster of a year and I feel so fortunate to be able to do what I love.

{Question}  Do you have a favorite cake/cookie that you created?

Choosing a favorite creation is impossible since I fall in love with each individual project!  The frills have certainly been well-received and there's a kind of meditative quality to that process.  But I also love to paint.  I think what I most enjoy are the fresh designs that come out of casual experimentation.

{Question}  What are your favorite sources for inspiration when creating your beautiful cakes and cookies?

I visit museums constantly and have a pretty extensive collection of Edwardian botanical prints.  Fashion designers like Alexander McQueen and Carolina Herrera never cease to amaze.  I'm also the one lingering over the flowers at the farmer's market, picking one stem at a time.  I can't help myself!

{Question}  What is next for Maggie Cake Austin?  Any sneak peeks of new designs to come?

The "new" for Maggie Austin Cake is our studio!  We found a home that is a perfect match for the company and it's so exciting to see it come together.  As for new cake and cookie designs, I'm always experimenting but I never reveal anything until I'm completely done!  Look for watercolor-inspired textile work...

Thanks so much Maggie for sharing your answers with us today!
